Think in ranges

You'll almost never know an opponent's exact cards, and you don't need to. Every action they take shrinks the set of hands they can logically hold: a Cutoff open means one range; calling your 3-bet narrows it further; check-raising a dry flop narrows it again. Playing well means playing against that whole set.

This is why the grid shows combos: AA is only 6 combinations while AKo is 12, so "they could have aces" matters half as much as "they could have ace-king." The simulator is a good place to practice this. Bot ranges are knowable, and the coach shows you the live range whenever you ask.
